Vaughan’s Anchor Inn Way out on the West Clare Coast amidst all of the stunning scenery is the pretty fishing village of Liscannor, which nestles between the famous Burren, the equally famous wonder of the world, the Cliffs of Moher, and the golfer’s paradise of Lahinch. In Liscannor it is perhaps appropriate that you will find one of the best seafood restaurants in Ireland in Vaughan’s Anchor Inn. The Anchor Inn is the sort of pub that people delight in visiting with the drums of salt and tins of rice propping adding character and giving an idea of what old Irish Pubs were really like. It is wonderful to find such a place run by three generations of the Vaughan family. John and Annette run the bar whilst their son Denis is the Head Chef who has a natural feel for food. The are very committed to sourcing the best of local and seasonal produce and of course the fishing boats are bringing their varying catch of the day to the Vaughan’s door – how fresh and organic is that!! Hard to beat. Food is served in the bar from 12.30 pm to 9 pm at very good prices. You could have their excellent seafood chowder or a Prawn Cocktail or a half dozen oysters. They are, of cours,e famous for their seafood platter which has smoked salmon, mussels, oysters, white crabmeat, Dublin Bay Prawns, roasted fresh salmon, crab claws, smoked mackerel and prawn tails garnished with salad! Mains might be traditional fish ‘n chips or honey roasted duck with a sweet potato stuffing. They do a lamb kebab and a beef burger, or if you fancy something fishy you could try the risotto of white crab meat and broad beans. Their pave of silver hake with sauteed potatoes with honey smoked bacon and wholegrain mustard beurre noisette is delicious. Their restaurant to the back opens at 6 p.m. Denis Vaughan’s food is innovative and delicious, a talent born of someone with a true love for food. Sauteed scallops might be with a puree of carrot with vanilla and a prawn foam whilst Spring roll of Liscannor crab comes with a tomato relish, sauteed foie gras, caramelised apple and foie gras foam. Poached free range duck egg with homemade black pudding comes with a foie gras butter – what a brilliant twist on the Full Irish! They use a wide palate of seafood – it obviously depends on the day. Denis teams Roasted Liscannor Bay lobster with braised lettuce, sauteeed foie gras, tomato and lemon butter whilst Liscannor Bay crab claws are sauteed with fresh herbs and garlic butter and paired with steamed Galway mussels. Viandes include an assiette of lamb, roasted rack and fillet, caramelised sweetbreads, sauteed kidney with gratin potato and a lamb stew. Roasted saddle of rabbit is stuffed with a foie gras and chicken mousse, and teamed with a rabbit pie and lolly pop with sauteed black pudding, wild mushrooms, rabbit jus. There is also a panfried T-Bone steak and each of these fabulous dishes carrieds the option to add sauteed foie gras at a small supplement. This is serious stuff at really good prices. Oh, and the drink is good too!!
