Restaurant Review - A Cheffy Collab
Wednesday 10 December 2025
Having opened its doors in 1981, back when Dublin’s dining scene was, shall we say, rather stark, Patrick Guilbaud’s quickly became our benchmark for fine dining, and for many years was our only holder of two Michelin stars. With the eponymous Guilbaud to the fore, executive chef Guillaume Lebrun heading the kitchen from day one, and ever suave restaurant manager Stéphane Robin taking care of all things front of house, it’s been frequented by celebrities, captains of industry and politicians from the nearby Leinster House.
Many young chefs have passed through Lebrun’s kitchen, gaining unparalleled experience before moving on to forge their own reputations, a prime example being the now Michelin-starred John Kelly, executive chef of the Mount Juliet Estate, in Thomastown, Co Kilkenny and its elegant Lady Helen Restaurant.
