The stodgy staples of life are a necessity in every society, to pad out the more expensive proteins and vegetables — the Italians with their pasta, the Asians with rice and the Middle Easterns with their couscous. For us, it’s the spud — boiled, mashed, chipped, colcannon, roasted — any which way — most of us were brought up on them.
