When you’re on a two-time winning streak, the smart money says you’re odds on to stack more gold in the future. Forgive the betting lingo, but I was in horsey country recently at the aptly named Arkle Bar and The Enclosure Restaurant in the Glenroyal Hotel in Maynooth, Co Kildare, enjoying some seldom-seen but utterly delicious sole on the bone for the third time in recent weeks.
