When the Dart arrived in Greystones 26 years ago, it transformed the beautiful sleepy coastal village in Co Wicklow into the vibrant commuter belt hub it is today. Back then the only place you might have even got a coffee would’ve been in a pub, and pretty well the only place of note to dine would have been Pat Keown’s Hungry Monk, which today is run by his son Julian.
