You can expect modern Irish cuisine, with eclectic twists, and a warm welcome at the superb family run Red Bank Restaurant in Carrick-On-Shannon, Co. Leitrim. Ideally located at the heart of the popular picturesque town, on the banks of the River Shannon, which attracts many visitors, they offer fab seasonal menus taking full advantage of the wealth of great local produce in region. The result is an assortment of delicious dishes catering for all tastes and dietary requirements. Set in a beautiful listed building, previously a bank, the space is modern and spacious, and has two private dining rooms available for functions and events.

They do an excellent Table d’Hote menu here, but, from the A La Carte, Appetisers include the likes of pan-seared scallops and tempura prawns with a pea puree, pickled mushrooms, roe dust, citrus syrup and crispy pancetta; Leitrim Hill Goats Cheese, deep-fried and served with candied nuts, basil pesto and a tomato & red pepper chutney; or perhaps some sticky black bean and tofu skewers with rice noodles. They also do a hearty West Coast chowder with brown bread, not to mention their finger lickin’ Gannon’s buffalo chicken wings with smoked bacon bits, blue cheese aioli and celery slaw.

Mains are divided by meat, or lack there of, with seafood coming under the heading of Joe Garvin’s Atlantic Catch, and offering such delights as their Jack the Lad pale ale battered haddock served with crispy caper and herb butter, pea puree, chunky tartare and a side of skinny fries. Their signature seafood linguine is excellent as well, brimming with Clew Bay mussels and king prawns.

A selection of premium beefy dishes from Brogan’s Farm include mouth watering options like a 12- hour-braised featherblade with garlic potato pavê, celeriac puree, tenderstem broccoli and a red wine jus; or a 10oz dry aged sirloin with crispy fried onions, roast flat mushroom and a tomato emulsion. Their smashed fillet steak burger is bound to impress with layers of Emmental, iceberg lettuce, beef tomato, peppercorn sour cream, crispy fried buttermilk onions and a side of skinny fries.

Poultry dishes too are impressive, with options like Silver Hill duck breast with potato rosti; or Gannon’s chicken supreme, herb croquette and roast carrots. They have a dedicated selection of vegan and vegetarian dishes as well, which includes dishes like a cauliflower, sweet potato and chickpea curry with coconut rice and some garlic flatbread; or maybe a tofu and black bean stir fry with rice noodles.

For dessert, tuck in to some Gunpowder Gin and vanilla crème brulee with citrus shortbread and dehydrated orange; a seasonal fruit crumble with vanilla custard and vanilla ice-cream; or maybe some salted caramel and coconut sticky toffee pudding. They do a toothsome selection of Irish artisan cheeses as well.

Besides from the great food at The Red Bank, there are cocktails galore with classic Martinis, Manhattans, Negronis and so on, plus lots of less familiar concoctions to try out as well.
