Co. Meath has so much to offer for the visitor, be it for the weekend, a day trip, or as a great central base for working outwards visiting Newgrange, or the site of the Battle of the Boyne.  It is full of wonderful little towns and villages, wonderful fishing and golf.

The perfect place to stay or eat is Trim Castle Hotel, in the heritage town of Trim, right overlooking the beautiful eponymous Trim Castle itself.  Trim Castle is the largest Anglo-Norman castle in Ireland.  It’s construction commenced in 1173 and it took 30 years to build and it was the location of the Mel Gibson movie ‘Braveheart’.

Jules Restaurant at Trim Castle Hotel opens on Friday and Saturday evenings and offers superb value with a very reasonably priced Table d’hote menu.  The Executive Chef here is Sean McDonald, who has worked in 5 Star hotels all over the world including the renowned Crown Towers in Australia, the eclectic influences of which can be seen in Jule’s Restaurant,   The menu combines classy French and Irish influences with a pan Asian twist.  Not only is the food good but their Table d’hote menu at €25 offers 4-courses plus tea or coffee.  Hard to beat.

Starters include such dishes as duck leg confit foie gras terrine paired with plum chutney and homemade bread, whilst home cured salmon is matched with pickled cucumber, mustard dressing and radishes.  Home smoked cod fishcakes come with spicy tomato sauce, and a tomato, red onion and coriander salsa.   Milleens Cheese hash brown comes with a crisp friend quail egg, bacon, celeriac and apple salad.  You can follow up then with a choice of soup, possibly cream of celeriac tweaked with Truffle oil, or an Irish Mist and Lemon Sorbet.   Mains will vary with seasonal elements but regular dishes include pan roast breast of chicken, potato, onion and herb terrine, sauteed mushrooms and café au lait sauce.  Crisp fillets of Seabass might come with a pearl barley and sweet corn risotto, Dublin Bay Prawns and Bisque sauce, whilst pancetta wrapped venison is paired with celeriac puree, pickled walnuts and foie gras jus.  They also have a sirloin steak available at a small supplement

Leave room for delicious desserts.  I love the mango and ginger pannacotta with red wine and seasonal fruits, and the honey slice with an Amaretto Anglaise and vanilla ice cream.  They also do the all time favourite Baked Alaska with a berry compote.

Very popular too is their Bailey Bar which does great bar food and is open for lunch and dinner.  Carvery lunch is available daily and they also have a topping Early Bird Menu.
