NORA EGAN LAUNCHES NEW BLACK PUDDING

Nora and John Egan have been running the well known Inch Country House and Restaurant for over twenty years at Thurles, Co. Tipperary, to which people travel from far and wide for their delicious wholesome food. Their daughter Mairin, who trained in Hotel Management, came home a couple of years ago to take the business onto the next generation as it were. However, the past is always very important at a great house like Inch, and they have just launched a new black pudding from an old recipe of Nora’s 90 year old mother, Mary Ryan, who is hale and hearty and tickled pink by the whole thing. It is called “Nora Egan’s Black Pudding” and the recipe is a secret, but I have had it and it is very nice indeed. Nora cooks it in a terrine and it is sold in log shapes, or you can have a vacuum pack quarter log. There is also a coeliac version. At the moment the pudding is available from Pat Whelan’s in Clonmel, Peter Ward’s in Nenagh, and at Denis Quirke’s Butchers in Nenagh – Quirke’s are specialising in the coeliac variety which is flying out. It will soon be on many menus throughout the country including Kay Harte’s cracking Farmgate Restaurant in Cork. It is also at O’Connell’s Restaurant, Ballsbridge. At Inch House they serve the pudding on red onion marmalade, topped with goat’s cheese. The Egans are also doing a range of ten chutneys including red onion, mango and plum. Yum Yum.
