The Guinea Pig may be the oldest restaurant in Dalkey in terms of its location and moniker but, having been taken over in its ‘classic’ state pre-Covid, French chef-patron Jérôme Fernandes has followed his vision, transforming the beloved pig into what feels like a chic new restaurant.
